1. Good canned tomatoes
Whole San Marzano style, crushed by hand. They become sauce in 12 minutes and taste like you simmered all afternoon.
2. Parmesan, the real wedge
Grate it fresh and save every rind in the freezer. One rind in a pot of beans or broth is an instant flavor cheat.
3. Anchovies or fish sauce
Nobody will taste fish. Everyone will ask why your food tastes deeper than theirs. One fillet, melted into the oil, changes the whole pan.
4. Frozen herbs in oil
Chop parsley, basil or cilantro before it dies in the crisper, cover with olive oil, freeze in cubes. Finishing flavor on demand.
5. A better box of pasta
Bronze-cut pasta holds sauce the way cheap boxes never will. It is a two dollar upgrade that reads as restaurant quality.
